Britt's Secret BBQ Rabbit Recipe
This is my most-requested recipe of them all! A sweet BBQ that is popular at potlucks, or as an easy family meal!
Britt's Super Secret BBQ Rabbit Recipe
1- 5-6lb rabbit
2- 20oz cans of pineapple rings in 100% juice
1/2cp packed light brown sugar
1cp of pineapple juice, reserved from the cans
1- jar sweet BBQ sauce (15-18oz) we prefer Stubb's Sticky Sweet BBQ sauce
Place pineapple rings in single layer on bottom of crockpot, as well as a single layer around the sides of the crock (this prevents rabbit from touching the sides of the crock and burning).
Place rabbit on top of pineapple slices.
Mix the reserved pineapple juice and the brown sugar until well blended, pour over rabbit.
Cover the top of the rabbit with the remaining pineapple slices.
Cook on low for approx 6hrs.
Remove rabbit, shred the meat (I prefer using my hands to feel for small bones).
Add the shredded rabbit meat and BBQ sauce to a saucepan, heat until warm and serve.
